This looks to be the best garden in many a year which means I will be canning, freezing, making relish, cucumber salad, squash pickle, salsa, tomato juice, etc...

Here is a recipe I use for Squash Pickle which is delicious.  I also vary the veggies by adding whatever I have from the garden such as zucchini, green peppers, etc...  I prefer to use Vidalia Onions when possible.  Official certified Vidalia onions are grown within a 50 mile radius of the  town of Vidalia in Georgia.  Something special about the soil makes these onions have their sweet distinctive taste.  Our grocery stores and Farmer's Markets have them NOW but only for a few weeks.  This relish is great with any kind of beans (my favorite being Great Northern Beans) or soup. 

 Make a pan of hot out of the oven southern cornbread, Bean Soup, Fresh corn, Squash Pickle and it'll make you "want to slap yo mama"...that's southern for *Real Good*

About This Recipe

"This is a sweet pickle - type squash. I have used this recipe this season, as has my Sister."

Ingredients

    • 4 cups cucumbers or 4 cups squash
    • 4 cups squash
    • 2 cups sliced onions
    • 4 bell peppers ( can be mixed red & green)
    • 2 cups vinegar
    • 3 cups sugar
    • 2 teaspoons celery seeds
    • 2 teaspoons mustard seeds

Directions

  1. Combine cukes, squash, onions& peppers and sprinkle with about 3 Tbls. of salt.
  2. Let set for 1 hour and then drain.
  3. Mix other ingredients and bring to a hard boil
  4. Add vegetables and bring to boil again.
  5. Fill jars & put in water bath for 10 minutes.

But he did it All By Himself!!!!

James doesn't let Cerebral Palsy slow him down, 
In fact, he learned how to navigate UP my staircase 1 month ago and this outing at our campground was a first time to transfer his new found skills of climbing steps from staircase to playground equipment.
