SQUASH PICKLE

SQUASH PICKLE

This is how I spent most of my Saturday.
If you've ever gardened, you know that squash waits for no man.  You either fry it, boil it, use it in a casserole, can it, freeze it, or make it into a relish.  
Do any of you have other ways to fix yellow squash?

This variety happens to be yellow straight neck squash.  The onions are green onions from my garden and genuine Georgia Vidalia onions (the BEST onion in the world)  A little Trivia:  Vidalia Onions are only grown within a 50 mile radius of Vidalia, Ga due to the special soil composition.  Vidalia onions can be grown other places but won't have the same flavor as *certified* Vidalia onions from Vidalia, Georgia

I had NO TIME for Sewing today even though I am on a deadline for 2 quilts.  But like I said, Squash waits for no man...or woman.

SQUASH PICKLE RECIPE
8 C. YELLOW SQUASH  sliced thin
2 C. ONIONS ( I Like Vidalia but I also used green onions from my garden)  sliced thin
4  BELL PEPPERS ( I used 1 red, 1 orange, 2 green.  I will add more red next time)
2 t. CELERY SEED
2 t.MUSTARD SEED
3 c. SUGAR
KOSHER SALT to sprinkle over veggies

Combine Squash and onions in large bowl, sprinkle kosher salt over veggies, set aside for 1 hr.
Drain Liquid off and rinse veggies with cold water...Drain
Combine vinegar, sugar, celery seed, mustard seed, & peppers.
Bring to Hard Boil.
Add Squash & Onion
Mix Well
Pack in Hot Jars & Seal.
10 min. waterbath

If you are unfamiliar with canning procedures, Google "canning procedures" and make sure you follow guidelines. The guidelines have been relaxed over the years but I take extra precaution to make sure my jars are clean, nick free, and HOT.  Some folks keep their jars in a warm oven while canning but I keep them in my large pressure cooker with boiling water.

SQUASH PICKLE IS GREAT SERVED WITH BEANS: PINTO BEANS OR MY FAVORITE WHITE NORTHERN BEANS.  IT IS ALSO GOOD USED ON A SUB SANDWICH OR HAM SANDWICH. 

I'm a busy gal during the summer despite battling my first cold in over 4 years!
My sweet Tractor man planted 2 huge gardens full of exactly what I requested so I can't allow one little veggie to go to waste.  With the cost of produce rising like everything else, preserving food has taken on a new importance.  Plus, there is a real sense of accomplishment seeing those jars of veggies sitting on my kitchen counter!

  1. This looks yummy! I used to grow zuchinni and a lot of it. But never pickled any of it. Right now I cant have a garden, but hopefully in the near future I can get back to the good earth! I do know my son would love if I did some hot peppers for him this year. Thankfully they are fairly inexpensive in the store. He loves it when I add lots of carrots and onions. I too am fighting a nasty bout of bronchitis, I hope this is no indication of how the summer is going to go! Happy canning!

  2. I have never heard of squash pickle! My first thot was you fell and landed on a pickle or dropped a jar of pickles :-) they sound intriguing

  3. they sound really good and my family likes yellow squash... but now that I am on a low salt/sodium diet, how much salt is left?

  4. Mom and I pick yellows yesterday and this morning, more tomorrow. We freeze them cooked and eat them all winter! Have a great weekend!

  6. I came across a recipe for zucchini fritters in this month's Bob Appetit magazine. They are made like potato pancakes, fried in a little oil and have a dipping sauce. Bet you could make them with yellow squash too!
